At Central Oregon Community College’s Cascade Culinary Institute, we prepare the people who deliver on these expectations and who delight the palate with the stroke of a whisk. The culinary arts industry in Central Oregon is booming. As restaurant competition increases, so does the need for talented chefs. Chefs who have chosen a career based on a passion for food.
At Cascade Culinary Institute, we are preparing tomorrow’s chefs for this growing demand. And beyond talent there is one thing each student shares, that very passion for food. That universal appreciation for the pleasure a fine meal brings, whether preparing it or consuming it.
Students here are following this passion. They gain experience not just in cooking the finest cuisine, but in all facets of restaurant management. Many have joined to make career changes. Some have been economically disadvantaged, working as well as studying during their full-time training. Now these same students excel at the finest restaurants in the region including Ariana, Merenda, Deschutes Brewery, Anthony’s, The Blacksmith and Sunriver Resort.
Founded by local chef/entrepreneur Julian Darwin, this is the first public culinary program in Oregon to be accredited by the prestigious American Culinary Federation.
Without the ability to support the growing number of students, we’re unable to support the community’s need for quality chefs. Of course, it is in these moments of need that opportunity presents itself.
THE PLACE IS SET FOR SUCCESS It’s always best to plan a meal well in advance. Cascade Culinary Institute is proud to announce a vision for the future that will benefit the community as much as it does the students. With the help of a new facility, the program will produce talent that’s competitive with chefs graduating from the finest schools in the country. The result will be the recognition of Cascade Culinary Institute as the premier culinary education in the Pacific Northwest. Our goal, first and foremost, is to prepare students for success. Doing so in the surroundings of the future culinary facility will ensure just that. The caliber of the new facility will be unlike anything the area has seen, shaping our future culinary leaders right along with our culinary experiences. With state-of-the-art plans, every detail of the facility was considered in order to propel students. From the size of the kitchen to the advanced demonstration theater to the expanded curriculum, the new culinary center will build an enriching learning experience – for the students as well as the community. Plans call for a 60-seat restaurant, giving our region a firsthand taste of the students’ skills as they hone them. The demonstration theater will also be home to cooking classes for the public. Most important, the new facility will allow Cascade Culinary Institute to train 100 students per year, potentially a five-fold increase. Meaning the talent available to our region’s restaurants will finally be able to keep up with the growing demand. So you’ll know that when you go out for a nice meal, that will be exactly what you enjoy.

Washington Dr. and Shevlin Park Rd. Expanded curriculum, with classes in baking, beverages and bartending, and business classes in marketing, budgeting, purchasing, cost control and human resources.
